Clams in Sambal Butter Sauce
Serves 4-6 people
Ingredients:

- 6 tbsp salted butter 🧈
- 1.5 cups minced shallots
- 1 cup minced garlic 🧄
- 3 tbsp tomato paste 🍅
- 1 cup beer (any blonde beer works) 🍺
- 1 cup fresh diced tomatoes 🍅
- 1-5 tbsp ChiliCali Sambal Base (start with 1 first and add more if you want more heat)
- 2 lbs (about 24 count) littleneck clams, cleaned 🦪
- 1 tbsp lime juice 🍋
- 1/2 cup cilantro leaves for garnish
- Lime wedges for serving
Directions:
In a small cast iron over medium heat, melt butter🧈. Add shallots and garlic🧄 and cook until soft, stirring often. Add tomato paste 🍅 and cook for about 2-3 minutes, stirring often. Add beer🍺 and fresh tomatoes🍅, and boil for about 2-3 minutes. Add ChiliCali Sambal Base and the clams. Cook until clams are opened, then stir in lime juice.
Serve with a baguette and enjoy!
