Tina's Mom's Bún Măng

If you aren't familiar Tina Nguyen, she is the wonderful visionary behind all of Tuk Tuk Box’s designs! 

We asked her what her favorite dish was and she said her mom's bún măng, a Vietnamese bamboo noodle soup with tender beef chunks and fragrant Southeast Asian herbs. Tina says it's always on point and reminds her of home. 

We're excited to share this recipe with you all!

P.S. Tina's mom sent her the recipe with these cute emojis, and we wouldn't dare take them out!

Ingredients

  • 1 can bamboo shoots, sliced
  • 1 lb beef 🥩, cut into cubes
  • 2-3 tomatoes 🍅, wedged
  • 2 stems of lemongrass, cut into 3 inch pieces
  • 1 tsp tamarind powder
  • 1/2 tsp ground red pepper (optional)
  • Garlic 🧄 & onion 🧅, finely chopped
  • Sugar and fish 🐟 sauce
  • Beef broth or water
  • Bún (aka rice vermicelli noodles), of course

Directions

Sauté garlic & onions until brown. Add beef and cook for 2-4 minutes. Add lemongrass, tomatoes, sugar, fish sauce, tamarind, and red pepper and cook for 10-15 minutes. Next, add beef broth or water until it covers the mixture by 3 inches. Cook until tender, and serve over noodles. "Taste and eat, yum 😋"

Optional: Garnish with cilantro and scallions
