JB's Fave Ampalaya Guisado (Sauteed Bittermelon)

Sometimes we’re a little bitter, but only when it comes to our food! This week we’re featuring a Filipino household favorite, Bittermelon + Eggs, which was JB’s of Unison Creative recipe of choice. Read more about JB Verances here.

A humble stirfy, 🍳easy to throw together without lacking any of the essential flavors. You can throw other veggies if you like and mix up your flavor profile!

Serves 2 
 
Ingredients 
  • 1 med tomato 🍅
  • 1 medium bitter melon
  • 3 garlic cloves 🧄
  • 2 eggs 🍳
  • 1 tbsp oyster sauce
  • 1/2 tsp fish sauce
  • 2 tbsp cooking oil
  • 1/2 tsp sugar
  • salt to taste
  • pepper to taste
Directions
Slice all vegetables & crush garlic. Salt bitter melon and soak for 30 mins in water with salt, then drain. In a skillet, sauté garlic until fragrant. Then add drained bitter melon & tomato. Cook until slightly softened. Scramble eggs in a separate bowl. Push veggies to the side, then add eggs to the pan. When eggs are soft cooked, mix together with the veggies. Add in sauce (oyster sauce, fish sauce, sugar) and mix. Serve warm with a bowl of jasmine rice.
